    Just out of interest - is the 4th July a public holiday in America?

    Do you Americans get a day off work on Independence Day?

    It's just a game, but it's expressive of warfare.

    Yes, happy 4th July. Out of coincidence I'm cooking a huge pan of chilli today. 2lbs stewing steak, 2lbs tomatoes, 2lbs beans. Yummy.

    Yes, it is a public holiday = government buildings, banks, markets are closed.....

    A lot of restaurants stay open. Most in fact, at least from what I can tell. But they also mostly close early.

    Just finished walking the dogs. Usually the road 3 houses down from my house is fairly busy. Saw all of 3 cars and 1 pickup truck whilst walking said same pooches. REALLY quiet.

    My family goes to a parade, then I bike, my son and I swim, then tonight we go to fireworks. Good times...

    Concerning my pot of chilli, what is the right length of time to cook stewing steak? I cooked it for 3 1/4 hours which I would have thought more than enough to soften it completely. But it was still a bit chewy. If I cooked it longer would it go all tough again, or soften even more? Some of you guys must be experts at cooking chilli. What is the secret to soft beef? The cut of meat makes a difference I know.

    Authentic CHILI doesn't have beans.
    The longer you cook it the more tender it gets.
    Use a coarse ground beef, or something like a Tri-tip cut...slice it into 1/4" cubes.

    Thanks guys for the 4th wishes. It IS a national holiday with MOST people off work. I work at a casino and am only off today because its my normal day off anyway.

    That is strange because I always thought that ground beef for chili was a no-no. It is like cheating in a way isn't it?
